When do you start cooking?

Our team will arrive approximately 6 hours before your service time, to starting cooking whole hogs and or ribs and other meats of your choice.

Will the food be ready at the start of the party?

It can be if you choose, but we strongly suggest that you plan your service time and hour after the start of your event. Let your guest arrive, relax and mingle and watch the pitmasters work on preparation of the food.

How big of an area do you need for your cookers?

Please provide an area for 1 -2 pickup trucks pulling trailers in. An area close to where you would like us to set up your service area. If your yard is not large enough, our team will set up on the street in front of your home. 

Do I need to provide a tent and table for the service area?

No! Our team will setup your service area with our own tents and tables.

Will everyone get a full rack of ribs?

Ribs are cooked as part of a package, not as the only protein. A St. Louis style rib will typically provide 3-4 servings per rack, when combined with another protein. 

How do you figure on how much food to bring?

As a standard rule of thumb, a 1/2 lb. of total proteins and a 1/4 lb. of total sides per person is calculated. We cook extra to insure that everyone gets their belly full!!!  

What happens at the end of service time?

At the conclusion of service time, our team will package your leftover food and leave it at a place of your choice for your guest to keep snacking on.
